Vegan Lasagne!

Oh hey, nice to see you again so soon. I decided to make another recipe post, this time for vegan lasagne! Who doesn't love lasagne? I apologise for the lousy photos. I really have no idea how to photograph lasagne so that it looks as good as it tastes. Plus, the lighting in my kitchen sucks and I'm just not a food photographer because I have no patience. But, I promise you, it tastes great, and looks way prettier in person/in your mouth. As mentioned, I am not a patient person. This meal is a lot more involved than most things I make, but I think it's worth it. Plus, this is about as lazy a version of lasagne you could get, next to buying one from the grocery store. Hey y'all, Long time, no post. I'm suffering from COVID isolation blues and boredom, so I decided to make a recipe post for this mushroom soup I whipped up the other day. It's pretty simple, but tastes gourmet AF (IMHO). I hope you enjoy it as much as I did. soupy twist Ingredients 1 small onion 3 cloves of garlic 500g mixed mushrooms (about 3 cups. I used button and crimini) * 1 tbsp olive oil 1 tbsp truffle oil (plus more for serving) 2 tbsp miso paste 4 cups stock/water ** 1 cup coconut milk (the kind from the can, not the kind you use on your Cinnamon Toast Crunch when you're too baked to make dinner) 1 tbsp cornstarch 1/4 tsp nutmeg salt + pep * optional: add a handful of dried mushrooms as well. I used dried shiitakes. ** If you have veggie stock, you can use 2 cups stock/2 cups water. It's been a week since it ended - sorry for the absence of a write up before now, my dudes. Whilst I felt mostly great upon ending the cleanse, I have mostly been wrapped up with the fact that I got a FUCKING CAVITY from doing the cleanse! That's right - my sweet, virginal, never had a cavity in my 32 years of life, teeth got a goddamn fucking cavity. Clearly I am not a dentist, so I'm sure there's a pretty good chance the cavity was there before, but all I'm saying is it never bothered me until the cleanse. The pain started the end of the first day. I thought my teeth were just becoming sensitive from the acid in the juices or possibly the sugar. DAY TWO It's 11am on day 2, and I am FREEZING! Is this because of the cleanse or is it because it's just really goddamn cold outside? I don't normally get chilly in our office, but I've been freezing my titties off all morning, and I cranked the heat in my apartment up to 25 last night. Is it the weather or the juice? It's the true mystery of our age. Besides being an icicle, I feel pretty good! I didn't finish all my juices yesterday, as I realised that getting through 7 juices in a 12 hour period (breakfast at 9am, and going to bed at 9pm) was just not going to happen. So today I started with my first juice (The Kickstarter again) at the gym at 6:30am, and then the second one (The Base again) at 9am. HI GUYS! Long time, no chat. My apologies for my extended writing absence. The last time I wrote was nearly a year ago. I got so distracted with meeting new people and playing at the beach in the Philippines, that I just plum forgot to blog about the rest of the trip. Much like how I forgot to blog the rest of Veg-Tember last year as well. Clearly, regular blogging is not my forte so just get off my fucking back OK. Hello again! You find me still in Banaue, enjoying yet another San Miguel, except this time I earned it after going on a wee hike this morning. The term hike is used relatively loosely here, since the majority of the inclines and declines involved steps. But the inclusion of rain, narrow ledges, wet moss, and my complete inability to stay upright made it worthy of an upgrade from a simple 'walk'. My driver picked me up at my hut hotel this morning, and brought me to the beginning of the 'Elvis Trail'. I think it is called the Elvis Trail, because if I had actually done the entire trail, I would have died a fat, pathetic death, facedown in a pile of something brown. Day 2-3 - overnight to Banaue

Good day, fair friends. I write this from the most stunning viewpoint in Banaue, sipping on a cold San Miguel Pilsen, and listening to the leftover raindrops falling around me. I arrived here after a long bus ride from Manila - 10hrs to be precise. This area of the Philippines is not accessible by plane. The closest airport is, I believe, Manila. To get here, you have to either drive or suck it up for the long coach ride, and let me tell you, after witnessing traffic around these parts, I wouldn't attempt to drive here if you paid me a million bucks. The city is fucking mental, and the twisty windy roads on the approach to Banaue are enough to give you motion sickness just looking at a map. But, the long and mostly uncomfortable coach ride was well worth it, even just for this view.
